How many of you have heard about the amazing results with P90X?

Mini Pizza

How many of you love pizza but don’t want to make a whole pizza for yourself. Well here is a quick and HEALTHY way to make a personal pizza.

Here is what you will need:
– whole wheat English muffin (I use an organic one with flax seeds for added benefits)
– tomato sauce (I made mine using organic tomatoes and organic Italian spices)
– cheese (I use grass fed mozzarella cheese)
– toppings if your choice ( I had turkey only) feel free to add as many veggies as you would like

Toast the English muffin and add the tomato sauce.


Place your toppings on it.


My son photo bombed it with his fingers. He was excited to have pizza for dinner.

Top with cheese.


Melt cheese. His can be done in the over at the broil setting. Watch to make sure you don’t burn it. You can also place in the microwave for 30 seconds to 1 minute.


Enjoy this personal pizza.




So do you have no idea what to make for breakfast or do you need more protein and hate eggs? Well I have the perfect solution for you. I call them bananacakes! They are simple to make and taste great. I love them, my son loves them, and even my husband loves them.

They are easy to make; you need two eggs and a banana. You mash the banana and whip the eggs together. You can add cinnamon which is what I do. Just make them how you would regular pancakes.

To add more to it purée fruit to place on top. Don’t mix it into the mix I tried it it doesn’t work.


This is mine with raspberry purée on top. I also added cinnamon into the mix! Yummy!


Last night we had mexican food at my house. We have several healthier versions of what can be fattening mexican items.

Ceviche is one of my favorites and I really only love my mom recipe. Not sure if that is I know what she puts in it or if it I season it and don’t add a lot of salt ( I am not a fan of salt).

I have attached a link to get the recipe, but it does tell how much. Really you can just guess at what you want, but just use all the ingredients.

Baby Food???

So maybe you have seen a pattern here zucchini. I love them and could eat them all the time. Well I make all my sons food and use only organic foods. I saw this in his recipe book and made it. It turned out good and will make for my husband and I with some added spices.

In a pan slice the zucchini and place in the bottom. I used two medium size ones. Pour about a cup of tomato sauce. I just blended up some tomatoes and that was my sauce. Put some mozzarella cheese on top and then drizzle a little olive oil on top. Cover with some foil. Put in the oven at 450 for 25 minutes or until the zucchini is soft and cheese is melted.

I didn’t add any seasoning but when I make it again I will add basil, oregano, garlic, and things to make Italian.



Baked zucchini chips

Sorry but life has been crazy. With taking class to become a health coach (which I now am), to building up my website and business, to my now 10 month old, life has been nonstop. But I have a ton to share with you.

I know I posted about kale chips and now here are zucchini chips. I like these more, but still love kale chips.

You cut the zucchini into thin slices and you press them between two paper towels to get as much water out as possible. Once you have done that then spray a baking sheet and place them on it. Make sure none of them are on top of each other. Brush some olive oil on them and sprinkle any seasonings you want. I just did sea salt but will do pepper as well next time. Pre-heat oven to 225 bake for 2+ hours. Watch for some that are browning quicker than the other. I checked about them about 15 mins earlier. I had to remove some of them.

Let them cool and the put them in a container to enjoy for later.
